On normal difficulty settings (100% hunger / sanitation rates) and assuming no mood penalties, the sanitation bar takes 2 hours to fill (6 in-game days), recovering 2.1 L of polluted water in the process (1.05L/hour, 0.35 L/day).

On Stationeer difficulty settings (150% hunger / 125% sanitation rates) and low mood penalties, the sanitation bar takes 58.14 minutes to fill (2.907 in-game days), recovering 1.68 L of polluted water (1.733 L/hour, 0.5779 L/day).
Sanitation needs correspond to 20%/L of polluted water inside the stomach. This need can be reset by emptying the stomach's polluted water contents into a [[Toilet]], at the cost of some clean water (which is converted into polluted water in the process).

Stationpedia

Over time satisfying Thirst and Hunger of Stationeers will cause them to need to relieve themselves. the ODA recommends that Stationeers set up a Modern Toilet within their base after landing, requiring an atmosphere and Water to operate. This will output Polluted Water which can be recycled using a Water Purifier and then used for other purposes, such as farming or drinking.

Separate from Hygiene, Sanitation is a game mechanic which while currently having no impact is likely to introduce a medium-to-long-term need for a livable atmosphere on higher difficulties, while introducing an opportunity to substantially reduce water consumption rate by recovering consumed water.

It's completely absent on Easy difficulty, and proxies off both Hunger mechanic for buildup rate as well as its own Sanitation rate multiplier. This makes it indirectly dependent on Mood, with mood levels below 25% increasing sanitation demands by 10%.

Players have a Stomach organ with a 10 L capacity. Water inside the stomach (obtained from drinking at a 1:1 rate) is metabolized into Polluted Water at a rate of 20 L/h while being equalized to a 37°C body temperature. This conversion/equalization is halted on a Sleeper/Cryo Tube and multiplied by offline metabolism multipliers for offline players.

Sanitation needs correspond to 20%/L of polluted water inside the stomach. This need can be reset by emptying the stomach's polluted water contents into a Toilet, at the cost of some clean water (which is converted into polluted water in the process).
